Pumpkin Fun

It's the season of cheap pumpkins and just the right weather for some soup.
I picked up 4 pumpkins yesterday in Waitrose for 20p each. One has been turned into a vat of pumpkin and carrot soup.

The shells were given to the kids to play with and the seeds roasted. That's the best thing about pumpkins not a bit is wasted! My 20p travels a long way.

After feeding us all for lunch and 2 of the neighbours children who were playing in our garden, I've frozen 6 portions and left enough in the fridge for lunch tomo if DH isn't hungry when he gets home.

Tomorrow I'm onto pumpkin two and hoping to attempt some Pumpkin Gnocchi!

Any other pumpkin recipes I should try?

  1. Pumpkin guts bread is delicious (sometimes called Pumpkin gut bread) worth a google to find a recipe to suit and imo delicious - you honestly wouldn't know it was made with the stringy inners after it was deseeded. If you have adventurous children then pumpkin hummus is nice too. Pumpkin pie, pumpkin cheesecake are both favourites here too.

  2. Pumpkin and Chickpea curry is good, and it roasts just as well as potato and parsnip. Cooked dry and mashed smooth it adds a lovely flavour to cakes and puddings.

  4. It's the season of expensive pumpkins here on the other side of the world. The supermarket has some special carving pumpkins for sale for around $20 (which would be just over 10 pounds I guess). So no pumpkin goodies for a while.
Pumpkin gnocchi is delicious and my daughter is partial to a grated pumpkin burger/ fritter. I think the recipe is from Jamie Oliver.
    Enjoy your bounty.
